Yummy Dosas

Ingredients
For the batter
Rice (The fat rice which we use for Khichdi)
2 cups
Urad Dal (Split Black Gram)
½ cup
Methi Dana (Fenugreek Seeds)
1 tablespoon

Procedure:
Soak the rice and methi dana together in water for whole night.
Soak urad dal separately in water for 4-5 hours.
On next day, when the rice n dal is soaked properly, grind into a fine paste in a mixer grinder. See to it that methi dana is finely ground because it will taste bitter if not mixed properly. Do not use any water
After all the ingredients are grinded, keep the batter covered for at least for 7-8 hours so that it gets fermented well and dosas will become thin n crispy.
After 7-8 hours, just add salt in batter and water if required in case the batter is too thick.
Now, heat a non-stick pan and let it get heated properly. Do not over-heat. Sprinkle some water on tawa n wipe with a cloth. Pour the batter and form a round dosa with help of a ladle as shown in the picture.
Apply oil/butter/ghee as required. I did not apply anything still the dosa came out crispy n light.


For the Chutney
Fresh Coconut cut into pieces
1 cup
Fresh coriander leaves
Spoonful
Green Chilli
2
Ginger
½ inch piece
Roasted Split Bengal Gram (Chane ki daal which is called as “Daliya” in Gujarati)
¾ cup
Salt
To Taste

Add all the ingredients in the mixer grinder.
Grind once without water. After that add water as per the consistency required. Grind into a fine paste.

For the Bhaji
Potatoes cut in pieces
4 nos
Oil
1 tablespoon
Curry leaves
4-6
Mustard seeds (rai)
1 teaspoon
Urad Dal (Split Black Gram)
1 teaspoon
Onions sliced
1 no
Turmeric Powder
1 teaspoon
Coriander-Cumin powder
½ teaspoon
Salt to Taste
To Taste

Heat oil in a pan, add mustard seeds and let it crackle.
Add urad dal and curry leaves. Sauté for 30 seconds.
Add onions and cook till they are translucent.
Now add potatoes, turmeric powder, salt, coriander-cumin powder.
Add 1 cup water and cover the lid. Let it cook till potatoes are soft and the water is evaporated completely. Garnish with coriander leaves and relish the Masala Dosas :) :)
